Meatballs

Ingredients:

  • ~3 lbs of ground meat (usually a mixture of beef, veal, and pork)
  • 8-14 cloves of garlic minced fine
  • ~1 cup of Parmesan cheese (this is a really crude guess, start w/ half of this and add more if you need too)
  • 6-8 eggs
  • 3-4 Tbl Spoons of Dried Parsley
  • Salt + Pepper + Red Pepper Flakes to Taste
  • 1-4 cups of fresh bread crumbs

Mix first 6 ingredients together in a large bowl. Add bread crumbs ~ 1 cup at time, mixing through until you get a moist but not wet consistency. Pan fry the meatballs (in olive oil) until VERY DARK on all sides and drop in a pot of your favorite marinara.

The secret is NOT to buy lean mean. The fat really makes them taste so good. Use equal parts of each type, but don't stress about that.
