Gouda Apple Chicken

Preheat oven to 450 degrees Note: I always add 50 degrees when I preheat and turn it down once I put the food in the oven, that way you don't lose your desired temp when you open the oven door to put stuff in.

  • 5 chicken breasts
  • 3 small granny smith apples
  • 1 small block (maybe 6 oz?) of smoked gouda
  • 1 medium RED onion
  • Half a block of cream cheese (4 oz?)
  • Bacon
  • Minced garlic, parsley and cilantro to taste... (yeah, I know, I don't measure when I cook)
  • A pinch of salt and pepper.

Pound the chicken flat under a folded piece of parchment paper to reduce flying chicken juices. Chop gouda, onion, and apples into a medium bowl (technically I think this is a "medium dice") Mix cream cheese and spices with the chopped stuff to give it some cohesion for stuffing. Wrap a handful of the stuffing in chicken and wrap the whole thing in bacon (I used 2 slices of bacon for each). I should have gotten a picture as the end result was very pretty and didn't require toothpicks or anything to hold together.

I had stuffing leftover, so you could definitely stuff another breast if you've got one. We just tossed the extra stuffing in the baking dish around the meat.

Bake at 400 for maybe 45 minutes, I used a digital probe thermometer and didn't really keep track of time, but as long as the middle of the chicken hits 180 degrees you're fine.
